Among the most classic of holiday desserts is this moist, dark cake suffused with the warmth of cinnamon, nutmeg, ginger, cloves, and allspice. Gingerbread has its roots in Europe, and it is most famously associated with Germany, where each home has its own recipe, varying from very spicy to sugary sweet. Ours includes a glossy coating of dark chocolate ganache, which delicately balances the piquancy of the spices inside.
