Trained as a child with culinary talented parents and later under master chocolatiers of French, Belgian, and Swiss schools, Iain melds renowned tutelage with a naturally gifted palate to cultivate a style all his own. “It’s good fortune that people like what I like,” Iain says. Of his creations, the velvet truffle stands out as a personal and customer favorite. A soft ganache covering encircles sumptuous fillings, all free of additives or preservatives to generate the purest product. Iain maintains the three-day method of production is well worth the effort, as the result nears magic, garnering dozens of awards and satisfied grins from every sweet-toothed guest dining at the shop.
