Tucked amid the heather-filled glens and crystalline waterways at the heart of the Scottish Highlands, a whimsical shop in Perthshire appears as if from a fairy tale, drawing patrons from all over with a promise of decadent cocoa confections. In the kitchen, Chef Iain Burnett (pictured above, left) creates sugary masterpieces, assembling a menu of artisan chocolates and pralines that have graced the dessert course palates of Michelin Star restaurants, luxury hotels, and Queen Elizabeth II’s table. Ideally situated a mere stone’s throw from nearby dairies and apiaries, Highland Chocolatier selects the finest cream from herds of Scottish Friesian cows and local honey, blending these with the rich taste of cocoa from the volcanic island of São Tomé.
