
Taking inspiration from the bevy of sweets mentioned in Lucy Maud Montgomery’s Anne of Green Gables series, we offer a menu of summertime recipes bursting with brilliant red fruit.
In central character Anne Shirley’s early days as a teacher, she receives an irresistible invitation: “‘Of course I’ll stay to tea,’ said Anne gaily. ‘I was dying to be asked. My mouth has been watering for some more of your grandma’s delicious shortbread.’ ” In tribute to Mrs. Irving’s specialty, we present our recipe for blushing Raspberry Shortbread Creams.Delight continues in Raspberry White Chocolate Tart, a treat Anne might have shared while a pupil at Avonlea School.
Topping our tiered server are Pink Heart Candies, confections reminiscent of a romantic gesture made by Gilbert Blythe in Anne of Green Gables.Described as “light and white” in the beloved books, “baking-powder biscuits” find an alternative in Ruby Rose Tea Biscuits. Crowned by fresh raspberries, these scones hold spoonfuls of homemade jam, with rose cream and additional jam kept close at hand.
Chefs in the Victoria test kitchens present Raspberry Cordial, in keeping with what Anne would have sipped, alongside Gin-Cordial Cocktail, which adds spirits to the classic drink.
