Tangerine-Clementine Gelée is simply flavored, allowing the clean, bright flavors of the citrus fruits to shine. A touch of fruity Sauternes wine in the gelée adds depth of flavor, while spiced Sauternes syrup flawlessly complements the sunny sweetness. A candied clementine slice provides a lovely finishing touch. Although their flavor can be bitter, the brightly colored peels of citrus fruits hold essential oils. Candying the peels mellows their sharpness and enables the pure essence of the fruit to come through.
