After owning several successful restaurants, Sophie and Gilles’ desire to start a bed-and-breakfast brought them new challenges and delights. “We enjoy receiving people from all over the world; it enriches our lives,” Sophie says. They know that in time, they will sell Chambres d’hôtes l’Oustal in order to enter another new period in their life: retirement. “We consider ourselves as passersby,” she says. “When we leave, others will come to continue the history of this house. And that’s a wonderful thought.”
