Cucumber and Smoked Salmon Bites

Cucumber and Smoked Salmon Bites boast a delicate garnish of feathery dill. Peeling ribbons from an English cucumber before slicing gives a decorative edge to the rounds, which are crowned with a cream cheese spread and morsels of tasty smoked fish.

Cucumber and Smoked Salmon Bites
 
Makes 6 servings
Ingredients
  • ¼ cup cream cheese, softened
  • 1 tablespoon chopped capers
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon lemon zest
  • 1 large English cucumber, cut into 12 (¼-inch) rounds
  • 1 (4-ounce) package cold smoked salmon
  • Garnish: fresh dill, lemon zest
Instructions
  1. In a small bowl, combine cream cheese, capers, dill, and lemon zest; stir until smooth.
  2. Top each cucumber round with 1 teaspoon cream cheese mixture. Top cream cheese with smoked salmon. Garnish with dill and lemon zest, if desired.
