Springtime Fruit Salad

Strawberries, pineapple, honeydew, blueberries, and oranges lend their charms to Springtime Fruit Salad, a colorful mélange tossed with a tangy honey-sweetened poppyseed dressing. Dividing the medley among individual compotes adds vibrance to each place setting while also encouraging those gathered to savor every bite.

Springtime Fruit Salad
 
Makes 6 servings
Ingredients
  • 1 cup quartered fresh strawberries
  • 1 cup (½-inch) diced fresh pineapple
  • 1 cup (½-inch) diced honeydew
  • 1 cup fresh blueberries
  • 1 cup orange sections (approximately 2 large navel oranges)
  • 3 tablespoons honey
  • ½ teaspoon grated Meyer lemon zest
  • 2 tablespoons Meyer lemon juice
  • ¼ teaspoon kosher salt
  • ¼ teaspoon poppyseeds
  • Garnish: fresh mint, Meyer lemon zest
Instructions
  1. In a large bowl, combine strawberries, pineapple, honeydew, blueberries, and oranges.
  2. In a small bowl, whisk together honey, lemon zest, lemon juice, salt, and poppyseeds. Add honey mixture to fruit mixture, tossing gently to coat; refrigerate until ready to serve, up to 1 hour. Garnish with mint and lemon zest, if desired.
