Snowflake Truffles

Sparkling confections perfect to serve at a holiday party or send home with guests, Snowflake Truffles boast delectable coconut-flavored filling enveloped in a crisp vanilla shell.

Snowflake Truffles
 
Ingredients
  • 1 (8-ounce) package cream cheese, softened
  • ¼ cup confectioners’ sugar
  • 1 teaspoon coconut extract
  • 2 cups sweetened flaked coconut
  • 1 (1-pound) package vanilla-flavored candy coating
  • Garnish: sweetened flaked coconut, white cake sparkles*
Instructions
  1. Line a baking sheet with parchment paper.
  2. In a small bowl, combine cream cheese, confectioners’ sugar, and coconut extract. Beat with a mixer at medium speed until creamy. Add coconut, beating until well combined. Cover, and refrigerate for 1 hour.
  3. Roll cream cheese mixture into 1-inch balls, and place on prepared baking sheet. Freeze for 2 hours to overnight.
  4. Melt candy coating according to package directions. Using 2 forks, dip truffles into melted candy coating to cover. Place on parchment, and let dry. Garnish tops of truffles with coconut flakes and cake sparkles, if desired. Refrigerate until ready to serve.

*For testing purposes, our test kitchen used Wilton Cake Sparkles.
