Margarita Sorbet

Margarita Sorbet
 
Ingredients
  • 3¼ cups water
  • 1¼ cups fresh lime juice, divided
  • 1¼ cups granulated sugar
  • 2 teaspoons lime zest
  • 3 tablespoons silver tequila
  • 1 tablespoon triple sec
  • Kosher salt, optional
  • Garnish: lime slices, lime curls
Instructions
  1. In a large saucepan, combine 3¼ cups water, 1 cup lime juice, and sugar over medium-high heat. Cook, stirring often, until sugar has dissolved. Remove from heat, stir in lime zest, tequila, and triple sec. Pour into a heatproof container and refrigerate to chill for at least 2 hours, up to overnight.
  2. Churn mixture in an ice cream maker according to manufacturer’s instructions. Transfer to an airtight container and freeze until firm, at least 4 hours or up to overnight.
  3. Before serving, let soften for 5 to 10 minutes. Prepare the rim of margarita glasses with remaining ¼ cup lime juice and kosher salt, if desired. Serve sorbet in margarita glasses. Garnish with lime slices and lime curls, if desired. Store in an airtight container in the freezer for up to 1 month.
