Elegant English Berry Puddings

A culinary curiosity attributed to the British, these sweet delights are turned out in pretty palettes swimming in plump berries, fruit-soaked breads, and swirls of whipped cream. Noted for such peculiar names as blackberry fool and peach syllabub, the desserts are heady with the fragrance of summertime’s most luscious fruits. 

A Rose and Raspberry–Infused Blancmange brings a work of art to your summer table. Shaped in a large gelatin mould, the dessert contains a rich helping of cream thickened with unflavored gelatin and fresh raspberries accented with rose water.

Deceptively minimal in presentation, this Blackberry and Lavender Fool is packed with taste. A puree of blackberries is drizzled with a lavender-infused syrup; topped with a mixture of whipped cream, blackberry liqueur, and vanilla seeds; and crowned with perfectly ripe blackberries.

Moist Summer Berry Pudding is prepared similarly to a French terrine. Made in a loaf pan with slices of brioche soaked in fruit juice, the colorful dessert calls for freshly picked strawberries, cherries, blackberries, and raspberries in a sugary blend of orange zest, orange juice, and crème de cassis.
