2 medium sweet potatoes, uniformly shaped and approximately 2½ inches in diameter
2 teaspoons olive oil
½ teaspoon fine sea salt, divided
⅜ teaspoon ground black pepper, divided
¼ teaspoon ground coriander
16 wedges Brie
Orange segments
Salted pumpkin seeds
3 tablespoons chopped dried sweetened cranberries
Fresh rosemary sprigs
Honey
Instructions
Preheat oven to 400°. Line a sheet pan with foil, and lightly grease with oil.
Using a sharp knife or mandoline, slice sweet potatoes into ¼-inch-thick disks. Place on prepared pan. Brush with olive oil.
In a small bowl, combine ¼ teaspoon salt, ¼ teaspoon pepper, and coriander. Sprinkle over sweet potatoes.
Bake until just fork tender, 8 to 10 minutes. Let cool completely on pan. To serve, top with Brie, orange segments, pumpkin seeds, dried cranberries, rosemary, and a drizzle of honey.
