Sweet Potato Bites
 
Makes Approximately 16
Ingredients
  • 2 medium sweet potatoes, uniformly shaped and approximately 2½ inches in diameter
  • 2 teaspoons olive oil
  • ½ teaspoon fine sea salt, divided
  • ⅜ teaspoon ground black pepper, divided
  • ¼ teaspoon ground coriander
  • 16 wedges Brie
  • Orange segments
  • Salted pumpkin seeds
  • 3 tablespoons chopped dried sweetened cranberries
  • Fresh rosemary sprigs
  • Honey
Instructions
  1. Preheat oven to 400°. Line a sheet pan with foil, and lightly grease with oil.
  2. Using a sharp knife or mandoline, slice sweet potatoes into ¼-inch-thick disks. Place on prepared pan. Brush with olive oil.
  3. In a small bowl, combine ¼ teaspoon salt, ¼ teaspoon pepper, and coriander. Sprinkle over sweet potatoes.
  4. Bake until just fork tender, 8 to 10 minutes. Let cool completely on pan. To serve, top with Brie, orange segments, pumpkin seeds, dried cranberries, rosemary, and a drizzle of honey.
