Cucumber Simple Syrup
 
Makes 1⁄3 cup
Ingredients
  • 2 cucumber peels*
  • ½ cup seeded and chopped cucumber
  • ½ cup granulated sugar
  • ½ cup water
  • Peel from 1 lime
Instructions
  1. In a small saucepan, bring cucumber peels, chopped cucumber, sugar, water, and lime peels to a boil over medium heat. Continue to boil for 10 minutes. Remove from heat and let cool completely. Strain mixture through a fine-mesh sieve into an airtight container, discarding solids. Refrigerate for up to 2 weeks.

*We used mini cucumbers.
