Roasted Potatoes
 
Ingredients
  • 1 (1.5-pound) bag baby Dutch yellow potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1⁄2 teaspoon ground black pepper
Instructions
  1. Wash and dry potatoes. Cut each potato in half.
  2. Preheat oven to 450°. Line a rimmed baking sheet with foil; spray with cooking spray.
  3. In a large bowl, toss together potatoes, olive oil, salt, and pepper. Arrange potatoes in a single layer on prepared baking sheet. Bake for 45 minutes, turn- ing potatoes halfway through baking. Serve with Citrus-Herbed Chicken.
