Almond Granola
- 4 cups old-fashioned oats
- 1½ cups sliced almonds
- ½ cup extra-virgin olive oil
- ½ cup honey, warm
- 2 tablespoons vanilla bean paste
- 1½ teaspoons kosher salt
- ½ teaspoon ground cinnamon
- ½ cup dried cherries, roughly chopped
- ½ cup dried apricots, roughly chopped
- Unsweetened Greek yogurt, to serve
- Preheat oven to 350°. Line a rimmed baking sheet with parchment paper.
- In a large bowl, combine oats and almonds. Toss together until well combined.
- In a small bowl, whisk together olive oil, honey, vanilla bean paste, salt, and cinnamon until well combined.Add honey mixture to oat mixture; stir together until well combined and oat mixture is well coated with the honey mixture.
- Transfer mixture to prepared pan and spread evenly.
- Bake until lightly golden brown, 30 to 40 minutes, stirring every 10 minutes. Stir in dried cherries and dried apricots. Let cool completely on pan. Break up granola pieces as desired. Serve with yogurt. Store at room temperature in an airtight container for up to one week.
