Cranberry Compote
 
Makes approximately 3½ cups
Ingredients
  • 1 (12-ounce) package fresh cranberries
  • 1 Granny Smith apple, peeled, cored, and chopped into ¼-inch pieces
  • 1½ cups granulated sugar
  • 1 cup water
  • 1 tablespoon fresh orange zest
  • ¼ cup orange juice
  • 1 cinnamon stick
Instructions
  1. In a heavy saucepan, stir together cranberries, apple, sugar, 1 cup water, orange zest, orange juice, and cinnamon stick. Cook over medium-high heat, stirring often, until cranberry skins begin to split, 10 to 12 minutes.
  2. Reduce heat to medium-low, and cook, stirring occasionally, until thickened, about 5 minutes.
  3. Remove from heat and let cool for 15 minutes. Remove and discard cinnamon stick. Refrigerate compote mixture in an airtight container for up to 1 week.
