The real-life singers who lend their voices to the gathering are certain to appreciate soothing sips of Wassail, a spiced beverage of apple cider, cranberry juice, and spirits.

Wassail
Serves: Makes approximately 5 quarts

Ingredients
  • 10 whole cloves
  • 10 allspice berries
  • 2 cinnamon sticks
  • 1 gallon pressed apple cider
  • 2 cups cranberry juice
  • 2 cups port wine
  • 1 cup fresh cranberries
  • ½ cup brandy
  • 1 orange, sliced into rounds
  • Garnish: orange slices, cranberries, cinnamon sticks
Instructions
  1. Place cloves, allspice berries, and cinnamon sticks on a small piece of cheesecloth. Bring edges of cheesecloth together to completely enclose spices; secure with kitchen twine.
  2. In a large stockpot, place sachet, cider, juice, wine, cranberries, brandy, and orange. Bring just to a boil; reduce heat to low and simmer for 2 hours.
  3. Keep pan over low heat or transfer to a slow cooker on low if serving over an extended period of time. Wassail can be made ahead and reheated before serving. Garnish with orange slices, cranberries, and cinnamon sticks, if desired.
