Springtime Fruit Salad

Ingredients
- 1 cup quartered fresh strawberries
- 1 cup (½-inch) diced fresh pineapple
- 1 cup (½-inch) diced honeydew
- 1 cup fresh blueberries
- 1 cup orange sections (approximately 2 large navel oranges)
- 3 tablespoons honey
- ½ teaspoon grated Meyer lemon zest
- 2 tablespoons Meyer lemon juice
- ¼ teaspoon kosher salt
- ¼ teaspoon poppyseeds
- Garnish: fresh mint, Meyer lemon zest
Instructions
- In a large bowl, combine strawberries, pineapple, honeydew, blueberries, and oranges.
- In a small bowl, whisk together honey, lemon zest, lemon juice, salt, and poppyseeds. Add honey mixture to fruit mixture, tossing gently to coat; refrigerate until ready to serve, up to 1 hour. Garnish with mint and lemon zest, if desired.
